What motivates us to choose the coffees we pick?

There is always the obvious, we strive to find delicious coffees, however our process is more thoughtful than just that.  

We love exploring coffee, finding new producers, new processing methods and interesting varietals as our explorations link us to the next origin relationship and the next exciting coffee. We also value the existing relationships we have with our green partners by committing to coffees before they are harvested giving the farmers the confidence of guaranteed sales, known volume plus secured income. This trust, helps us to select a range of coffees that uphold our high standards for quality. Whether you like fruity coffees, comforting chocolatey coffees or experimental lots, the 2022 assortment that we’ve selected is truly sensational. We’re extremely proud to be roasting these coffees and can’t wait to share each origin story with you….

Introducing COLOMBIA – Finca Santuario, Red Bourbon, Gold Wash

If we had to pick a favourite coffee of 2021 the Gold Wash from Finca Santuario was not only memorable for us but a stand out for many of our followers. If you loved last years Yellow Bourbon, the 2022 Red Bourbon is equally as impressive with a flavour profile that is vibrant and complex. If this is the first time you’re learning of the Gold Washed process here is a quick snapshot … bourbon cherries go through an extended processing experience with 92 hours of anaerobic cherry fermentation then depulping, followed by 76 hours of further anaerobic fermentation prior to drying on African raised beds. The result is juicy, sweet, incredible complexity of tropical notes with a rich sweet lingering finish.

With farms located in Colombia, Costa Rica, Brazil and Mexico, The Santuario Project brings together a world of coffee knowledge coupled with decades of farming experience and a commitment to achieving the best growing, processing and farming outcomes.

With a total of 6 (yes 6!) Colombian coffee’s planned for release, we have a very exciting collection of special releases, small lots, interesting processing methods and flavour experiences ready to share with you in our Spotlight on Santuario.
