It’s actually difficult to summarise how impressive this coffee is in words – we’ve been left speechless and that speaks volumes. This coffee has well surpassed any expectations and has utterly surprised us with it’s unique tasting notes and clarity of flavours.
So, why is this coffee so special?
Firstly, credit must be given to the producer Camilo Merizalde of Finca Santuario who began with a clear vision of producing quality not quantity. Known for his experimental processing methods, Carlos has pushed the boundaries of fermentation in this unique ‘Gold Wash’ process. Here the yellow bourbon cherries go through an extended processing experience with 92 hours of anaerobic cherry fermentation then depulping, followed by 76 hours of further anaerobic fermentation prior to drying on African raised beds. The result is juicy, sweet, incredible complexity of tropical notes with a rich sweet lingering finish- just amazing coffee in every way.
