Introducing Costa Rica, Volcan Azul, Obata – Anaerobic Red Honey.
A farm that needs little introduction, for our past customers that enjoyed our 2022 selection from this heritage farming family, you’re in for another treat. For our new customers, this coffee is the perfect introduction to Alejo Castro Kahle’s commitment to excellence, inspired by his coffee farming ancestors in the heart of Costa Rica on the slopes of the Poás Volcano in the West Valley.
Using Obata varietal cherries, the Red Honey process involves close monitoring to achieve optimal sweetness, cherries are picked at the optimum level of ripeness and pulped by pressuring them against a centrifuge. With 100% of the mucilage still on the beans, the coffee is patio dried or placed on raised beds and rested for 24 hours, followed by daily stirring. This drying process will take between 9 and 12 days depending on the weather. The result is a coffee that is sweet and clean with a profile of tart red berries, stewed fruits (apricot) and dark chocolate.
