When we first cupped this coffee we couldn’t quite get our minds around what we were tasting.. was this truly decaf? Our first roasts were trialed by some devout decaf drinkers who equally shared our disbelief. For anyone that prefers a coffee sans the caffeine hit we encourage you to step outside of what you think decaf coffee can be to enjoy this very special offering.
Made from a microlot of hand picked and sorted 100% Castillo cherries from Jairo Arcilla.
Using the sugar water process, the green coffee is soaked in a bath of water and solvent (ethyl acetate (EA)) naturally derived from fermented sugar, among other natural sources. The solvent bonds to the salts of chlorogenic acid within the coffee, which allows for the extraction of caffeine. The coffee is removed from the bath and steamed at low pressure to ensure no traces of E.A. are left. The finished product is 99.9-99.3% caffeine free.
Our team have developed a superior FILTER roast profile for this coffee, making it a smooth drinking pour over and immersion brew.
