Rounding out our selection from the recent Mexican harvest, our fourth and final pick comes from the heritage farm lands of Finca Guadalupe Zajú, Mexico. Established in 1890 in the famous Soconusco region of Chiapas, the farm is owned and operated by Eduardo ‘Teddy’ Esteves. With over 150 years of combined family experience, Teddy pays particular attention to the agronomy of his crops and has welcomed the expert advice of Camilo Merizalde’s Santuario Project to assist in the production of this sublimely executed release.
With 100% shade grown coffee trees, teddy thoughtfully replaced older mature trees with the high yielding Marsellesa varietal that is known for its excellent cup quality. In this example, Marsellesa cherries receive a mosto wash, a sweet cherry juice that is added back into the fermentation process bringing out vibrant fruit characteristics. The resulting cup is very surprising for all the right reasons, a delightful filter and expressive espresso. Very easy drinking. Very delicious.
