Costa Rica – Volcan Azul | Typica – Washed

Tastes of: Cream, Dark Chocolate, Roasted Hazelnut, Mandarin

Every year we get excited to have Alejo Castro’s coffee on the table for us to pick. As a sixth-generation coffee produce, Alejo’s coffee sets a standard for quality and clarity of flavours that leaves a lasting memory. This year we have two options that focus on the Typica varietal with each being processed differently.

What’s in the bag? This Typica varietal has been fully washed process resulting in a sweet and clean cup carried by gentle acidity. A thoroughly enjoyable filter brew.

Continuing his family legacy that began in the mid-19th century with pioneers Alejo C. Jiménez and Wilhelm Kahle. Today, Alejo manages Finca Volcán Azul, situated on the fertile slopes of the Poás Volcano. Under his stewardship, the farm has embraced innovative processing methods and a commitment to environmental conservation, including the protection of over 1,500 hectares of rainforest.

Ethiopia – Gicho, Limu (Mixed Varietals) – Washed.

Tastes of : Peach, Violet, Honey, Bergamot, Lemon Curd.

Producer Seid Kemal’s journey in coffee began in Sedi Village, Gera Woreda—an area known for its rich biodiversity and semi-forested coffee farms. Growing up near the Gera Research Center, Seid was immersed in coffee from an early age. After working with local collectors and washing stations, he secured a loan to build his own in 2016. Today, he manages 60 hectares of family farmland and partners with 40 smallholder farmers, offering a second payment to reward quality and sustainability.

2024 marked the arrival of Seid’s coffee in Australia. He works with disease-resistant varieties like 75227 and Merdacheriko, carefully processing cherries through 60–72 hours of fermentation and a dual-stage drying method to ensure clarity and consistency.

The result is a refined cup that showcases Gera’s high-altitude terroir—elegant and balanced, with bright citrus acidity, floral aromatics, and lingering honey sweetness.
