Green Spring is the result of a collaboration between Ture Waji and Mike Mamo, two influential figures in Ethiopian specialty coffee and long-time partners of Osito. After initial challenges put the project on hold, its revival reflects their commitment to both quality and community.
Situated in the Sonkolle Kallato kebele of the Guji Zone, Green Spring lies at elevations of 2,200–2,350 meters above sea level. The cool microclimate, with temperatures ranging from 10–23°C, encourages a slow maturation of cherries, enhancing sweetness and complexity. Local varieties, valued for their resilience and outstanding cup profile, are cultivated here and have since spread widely across Ethiopia.
Processing is meticulous: cherries are dried on raised beds for 21–28 days, with regular monitoring to ensure precision and consistency. The result is a coffee that captures the character of Guji — vibrant, layered, and expressive.
