Colombia | Campo Hermoso | Pink Bourbon – Black Honey (Galaxy Hops)
Tastes of: Lemon grass, thai basil, lime, tamarind
Meet one of the most adventurous coffees we’ve released: a Pink Bourbon from Colombia, fermented with galaxy hops at the hand of processing expert and long time coffee partner Edwin Noreña of Campo Hermoso.
Since 2021 we’ve featured Edwin’s coffee both through his work with the Santuario Project and Campo Hermoso. First Gold Wash then Black Lime, this time round Black Honey with Galaxy hops.
Using the pink bourbon varietal known for it’s sweetness and complexity, cherries are grown at high elevation of 1,650 masl. Cherries are picked at over 20° Brix, then go through 72 hours of carbonic maceration. The juice collected during this stage is inoculated with yeast and powdered Galaxy hops, then returned to the pulped black honey coffee for a further 72-hour maceration. The coffee is dried for 10 days in a controlled greenhouse, then rested for another 10 days with dehydrated pulp and organic cinnamon.
The result is bright, herbal and citrus-driven, with lemongrass, Thai basil and lime leading into a tamarind sweetness on the finish.
A true conversation starter for people who love something different in the cup but not too wild that you won’t want to go back for more!
